I think the issue has to do with the game not counting a multiplier until after it has been lost. A multiplier that is kept through an entire summoning is never lost, and is therefore counted as 1. The same thing shows if you are in the middle of a summon and back out to the pause/statistics screen. Back out in the middle of your first multiplier and no matter how high it is, no matter when you back out, the multiplier is 1. End the multiplier, back out, and that stat is immediately updated.
